Color and Appearance:	Cherry red with cherry rim and middle layer.
Nose / Aroma:	On the nose, the entrance unequivocally reminds us of the primary aromas with a subtle floral hint of violets, some pure cocoa and a marked balsamic sensation.
Mouth / Flavors:	On the palate it is black fruit, especially blackberries. The tannin appears only to give character and presence in the mouth. The acidity accompanies the drink and gives it persistence.
Recommendations:	Temperature 17º - 18º C.
Food Pairing:	A delicate wine in terms of aromas but with enough structure to accompany fatty fish, pasta with white sauces, poultry and semi-cured cheeses.

Ageing:	Fermented in used 400 liter barrels. The acidity is a virtue and the tannin is worked with 50% aging in French oak and the other 50% in a 5000 L clay pot for 12 months.
