Nose / Aroma:	It shows aromas of grated chocolate, black pepper and lemon thyme.
Mouth / Flavors:	On the palate it has a marked earthy flavor, being wild and, at the same time, very well structured and voluminous.
Recommendations:	Temperature: 14 - 16º C
Food Pairing:	Red tuna belly, meat and vegetable lasagna, slaughter with fried eggs, hot pots.

Raúl Pérez está considerado como uno de los principales enólogos en el auge irresistible del Bierzo como región de calidad indiscutible, reconocido como uno de los mejores a nivel mundial.

Nació en 1973 en Valtuille de Abajo y procede de una familia berciana de viticultores de toda la vida.

Se unió a la bodega familiar Castro Ventosa con 19 años y pertenece a la generación de enólogos que ha revolucionado esta comarca. Ayudó en la primera elaboración de Álvaro Palacios en la zona y también a la familia Peique en sus primeras añadas.

En 2003 inició su proyecto personal bajo el nombre de Ultreia.

Raúl Pérez tiene una forma particular de entender el vino. La prioridad no es la bodega, sino la viña.

En el Bierzo es también director técnico de Bodegas Estefanía y su marca Tilenus, y recientemente ha vuelto a la bodega familiar Castro Ventosa. Pero sus colaboraciones y asesorías son numerosas e incluyen zonas como Rías Baixas (con su vino Sketch) Ribeira Sacra (con su vino El Pecado), Monterrei, Madrid; además de haber trabajado en países como Portugal y Sudáfrica.
